Sometimes you just need an easy weeknight meal, and this is one of them. Most of the ingredients you probably already have in your pantry or freezer.
- 6 oz of thin spaghetti (Angel Hair also works)
- 6 tablespoons creamy peanut butter
- 2 teaspoons garlic powder
- juice of 1 lime
- 4 tablespoons soy sauce
- 1.5 tablespoons spicy sesame oil (you can use regular sesame oil just add some red pepper flakes)
- 16 oz mixed Asian vegetables
Set the pasta to cook and steam the Asian vegetables until cooked. The best way to make sure the sauce is evenly distributed across the whole dish is to make the sauce in the bowl that you will be serving the pasta in and simply add the cooked pasta to the already made sauce rather than adding the sauce to the pasta.
In the large bowl combine the peanut butter, garlic, lime juice, soy sauce and sesame oil. Whisk vigorously until the mixture is combined.
Once the pasta is cooked, slowly add it to the bowl of sauce, about 1/3 of the pasta at a time to ensure that it is properly coated by the sauce.
Once all the pasta has been added then add the cooked vegetables.
The dish can be served as a side or if you can add some cooked grilled chicken for a main dish.
